Apple's Mail.app isn't the best email application out there, but it is better than most (don't even get me started on the horrid UI disaster that is Entourage). However, one of Mail.app's serious failures is with IMAP. Not only does it not understand how to keep sent mail on the server (though there is a workaround), but if you change your account login settings, or change the email server, you will lose *all* your mail.

I had to move my domain over to a new server, so I thought I'd make new email accounts on the new server, and have Mail.app just synch with the new server (uploading all my mail). As it turns out, it's a one-way synch. Instead of moving all my mail to the new server, it deleted all the mail from that account.

Luckily, I can switch DNS back to the old server, save all the mail to an off-line folder, then manually move it back to the new server.
