I just started a new workout routine for the next 8 weeks. It consists of an hour of cardio early in the morning everyday, and lifting three times a week. The routine also calls for a modified diet low in carbs. [livejournal.com profile] notdefined Asked me to post the recipe for my dinner this evening, so here it is:

Keep in mind, I don't use recipes, so you'll have to figure out the ratios to your personal taste.

Spiced Lamb Stuffed Peppers
  • Ground lamb
  • Onion
  • Red pepper
  • Poblano Pepper (to be stuffed)
  • Tomatoes
  • Hot paprika
  • Salt & Pepper
  • Garlic
  • Goat's milk feta cheese 
  1. Dice the red pepper, onion, garlic
  2. Chop the tomatoes (I used a normal tomato, as they didn't have cherry tomatoes. I'd go with halving cherries instead)
  3. Sauté the onions, garlic, and red pepper until just barely soft (they'll finish up later)
  4. Cut the tops off the poblano peppers, and get rid of any seeds and ribs 
  5. Roast the poblano either in an oven, or directly on your gas range (that trick doesn't work on electric ranges). Set aside for stuffing.
  6. Add paprika and S&P while you brown the lamb
  7. Drain the fat from the lamb
  8. Incorporate the red peppers, garlic, onions, and tomatoes into the lamb in the same skillet that browned the lamb.
  9. Cook for a wee bit until done
  10. Fill the peppers with the lamb/veg mix
  11. Garnish with the feta
